If a puppies ears are starting to stand pretty good at almost 10 weeks does that necasarily mean they will end up being ok? I have just seen so many crop disasters I don't know what to do! I do like the cropped look but does it matter that much for shows?

I'm far from an expert, although of course here in the Netherlands all dogs are uncropped. From what I also read on the Dutch forum it is difficult to predict, even when at a certain moment they are correct. Even taping/glueing does not always help. Important is the period when they are changing their teeth.
Should you want to help them here you find instructions for glueing:

I'm sure Google can find you an instruction for taping.

As for shows, my limited experience is that in countries where cropping is allowed, and with a judge coming from such a country, it does make a difference. I still however am happy we don't crop.

If you like the crop then they must be ok.. You would notice a disaster the same day. IMO Some dogs will stand up the day they are done and others you have to post OVER AND OVER>. I HATE IT>LOL
